This is my father’s recipe, who got it from his father and I believe it’s a common summer dessert or quick hot afternoon snack as most of the Italians in the neighborhood where I grew up had the same or similar concoction in their fridge in the summer. I was pretty young when I got my first taste of wine, it was a scorching summer and the wine soaked peach was a refreshing and welcome respite from the heat. I got to have just a taste of the wine which had a nice grape – peach flavor balance and the memory remains a favorite childhood experience.
It’s a very simple recipe that require three items, ripe peaches, a good red wine and a container to combine the two. There are no hard and fast measurements. My suggestion is a good home made red if you make your own or are lucky enough to know someone who does. If not buy a bottle of good red, dry or sweet, depending on your taste and enough ripe peaches to fill your container.
Peel and halve the peaches remove the pit then slice the fruit into about one inch sections. If you have a wide mouth container you could just halve the peaches and you’re done but the peach doesn’t absorb the wine as well. Place your peach slices into the container, cover with the red wine and put the container into the refrigerator till chilled. This makes a great summer dessert to be eaten while enjoying a glass of the wine. Some top the peach with whipped cream and chopped nuts but I like the peach as is. It has never lasted in my household for more then a day or two so I’m really not sure on shelf life.
